Ideally, handlebars should be as wide as the rider's shoulder joints. If the handlebars are wider, this changes the entire riding position. This has negative effects on comfort, aerodynamics and increases the effective reach that riders need to manage.

The handlebars are not just narrower, but also have minimal reach (distance from the levers to the top bar) and minimal drop (distance between top and bottom bar).
